2 medium zucchini (about 3 cups grated)

1 large egg
1/4 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
1. 1. Wash and grate zucchini into fine shreds. Place in a colander, sprinkle with a pinch of salt, and let sit for 10-15 minutes.
2. 2. Transfer zucchini to a clean kitchen towel or paper towels and squeeze out as much liquid as possible.
3. 3. In a large bowl, combine squeezed zucchini, flour, beaten egg, Parmesan, cheddar, garlic powder, onion powder, dill (if using), remaining salt, and pepper. Mix until a cohesive batter forms.
4. 4. Preheat air fryer to 375°F (190°C) for 5 minutes.
5. 5. Lightly spray air fryer basket with olive oil. Scoop tablespoon-sized portions of batter, gently flatten into 1/2-inch thick discs. Place in a single layer in the basket without overcrowding (cook in batches if needed). Spray tops with olive oil.
6. 6. Air fry for 8-10 minutes, flipping halfway through (at 4-5 minutes) and spraying the other side with oil. Cook until golden brown and crispy.
7. 7. Serve immediately with your favorite dipping sauce.
