Ingredients

For the Greek Chicken: 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes; 2 tablespoons olive oil; 2 tablespoons lemon juice; 1 tablespoon red wine vinegar; 3 cloves garlic minced; 1 teaspoon dried oregano; 1/2 teaspoon dried dill; 1/2 teaspoon salt; 1/4 teaspoon black pepper

For the Tzatziki Sauce: 1 cup plain Greek yogurt; 1/2 cup cucumber grated and squeezed dry; 1 clove garlic minced; 1 tablespoon fresh dill finely chopped; 1 teaspoon lemon juice; pinch salt; pinch black pepper

For Assembly: 6-8 pita breads; 1 cucumber diced; 2 tomatoes diced; 1/4 cup red onion thinly sliced; 1/4 cup feta cheese crumbled (optional); fresh parsley for garnish (optional)

Instructions

1. 1. In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, oregano, dill, salt, and pepper to make the marinade.

2. 2. Cut chicken into 1-inch cubes and add to bowl. Toss to coat. Cover and refrigerate for at least 30 minutes (up to 2 hours).

3. 3. Meanwhile, prepare tzatziki: Grate cucumber and squeeze out liquid. In a small bowl, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Stir and refrigerate.

4. 4. Preheat air fryer to 375°F (190°C) for 5 minutes.

5. 5. Place marinated chicken in a single layer in the air fryer basket (cook in batches if needed). Cook for 10-14 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).

7. 7. Warm pita breads in air fryer at 350°F for 1-2 minutes, or in a dry skillet or microwave.
