Ingredients
For the Greek Chicken: 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes; 2 tablespoons olive oil; 2 tablespoons lemon juice; 1 tablespoon red wine vinegar; 3 cloves garlic minced; 1 teaspoon dried oregano; 1/2 teaspoon dried dill; 1/2 teaspoon salt; 1/4 teaspoon black pepper
For the Tzatziki Sauce: 1 cup plain Greek yogurt; 1/2 cup cucumber grated and squeezed dry; 1 clove garlic minced; 1 tablespoon fresh dill finely chopped; 1 teaspoon lemon juice; pinch salt; pinch black pepper
For Assembly: 6-8 pita breads; 1 cucumber diced; 2 tomatoes diced; 1/4 cup red onion thinly sliced; 1/4 cup feta cheese crumbled (optional); fresh parsley for garnish (optional)
Instructions
1. 1. In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, oregano, dill, salt, and pepper to make the marinade.
2. 2. Cut chicken into 1-inch cubes and add to bowl. Toss to coat. Cover and refrigerate for at least 30 minutes (up to 2 hours).
3. 3. Meanwhile, prepare tzatziki: Grate cucumber and squeeze out liquid. In a small bowl, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Stir and refrigerate.
4. 4. Preheat air fryer to 375°F (190°C) for 5 minutes.
5. 5. Place marinated chicken in a single layer in the air fryer basket (cook in batches if needed). Cook for 10-14 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
6. 6. While chicken cooks, dice cucumber, tomatoes, and slice red onion. Crumble feta and chop parsley if using.
7. 7. Warm pita breads in air fryer at 350°F for 1-2 minutes, or in a dry skillet or microwave.
8. 8. Assemble: Open warm pita pockets, fill with cooked chicken, vegetables, and tzatziki. Sprinkle with feta and parsley if desired. Serve immediately.
Notes
Nutrition values are estimated per serving (one pita) using full-fat Greek yogurt, olive oil, and including pita bread. For lower calories, use low-fat yogurt and whole wheat pita. Marinate chicken no more than 2 hours to avoid mushiness from acid. Store components separately for leftovers.
