Ingredients
2 large croissants
4 oz soft goat cheese (about ½ cup)
1 medium apple (Honeycrisp, Fuji, Gala, or Granny Smith)
½ cup arugula or baby spinach
1–2 tsp honey (optional)
Pinch black pepper (optional)
Instructions
1. Slice each croissant in half horizontally. Optionally, lightly toast the croissant halves in a toaster oven or dry pan for 1-2 minutes until golden.
2. Spread goat cheese generously on both the bottom and top halves of each croissant.
3. Core and thinly slice the apple into ⅛-inch thick slices.
4. On the bottom half of each croissant, arrange an even layer of apple slices.
5. Add a handful of arugula or baby spinach on top of the apples.
6. If desired, drizzle a small amount of honey and sprinkle a pinch of black pepper over the filling.
7. Place the top half of the croissant over the filling, press gently, and serve immediately.
Notes
For best results, use fresh, flaky croissants and a crisp apple like Honeycrisp. Soften goat cheese at room temperature for easier spreading. Assemble just before serving to prevent sogginess. Variations include swapping goat cheese for cream cheese or brie, using pears instead of apples, adding bacon or prosciutto, or toasting the croissant for extra crunch.
