2 cups full-fat cottage cheese
1 large egg
2–3 tablespoons maple syrup
1 teaspoon vanilla extract
1 teaspoon lemon zest (optional)
1/4 teaspoon salt
1 cup fresh or frozen blueberries
Instructions
1. 1. Preheat your oven to 375°F (190°C). Lightly grease four 6-ounce ramekins or an equivalent oven-safe baking dish with cooking spray or butter.
2. 2. In a medium mixing bowl, combine cottage cheese, egg, maple syrup, vanilla extract, lemon zest (if using), and salt. Mix thoroughly until well combined and smooth.
3. 3. Gently fold in blueberries until evenly distributed.
4. 4. Divide mixture evenly among prepared ramekins, filling each about two-thirds full.
5. 5. Place ramekins on a baking sheet and bake for 20-25 minutes, until tops are lightly golden and the mixture is set.
6. 6. Let cool in ramekins for 5-10 minutes before serving. Serve warm with desired toppings.
Notes
