Ingredients
4 medium-sized pears (Bosc, Anjou, or Bartlett)
1 cup mixed berries (fresh or frozen)
2–4 tablespoons maple syrup (or honey)
½ teaspoon ground cinnamon
¼ teaspoon nutmeg (optional)
1 tablespoon unsalted butter (or coconut oil)
¼ cup water (or orange juice)
Pinch of salt
Instructions
1. 1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
2. 2. Wash pears, cut in half lengthwise, and scoop out the core to create a well. Optionally peel.
3. 3. Place pear halves cut-side up in the baking dish.
4. 4. In a small bowl, combine mixed berries, maple syrup (or honey), cinnamon, optional nutmeg, and a pinch of salt. Stir gently.
5. 5. Spoon the berry mixture into the hollowed centers of the pears. Scatter extra berries around the dish.
6. 6. Drizzle melted butter (or coconut oil) over the pears. Pour water (or orange juice) into the bottom of the dish around the pears.
7. 7. Bake for 25-35 minutes, until pears are fork-tender and berries bubble.
8. 8. Remove from oven and let cool slightly before serving. Enjoy warm.
Notes
Choose firm but ripe pears for best results. Adjust sweetness based on pear ripeness. For a vegan version, use coconut oil instead of butter and maple syrup instead of honey. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in oven at 300°F for 10-15 minutes or microwave for 30-60 seconds.
