Instructions
1. Prepare Your Dry Ingredients: First, grab a large mixing bowl. Add the all-purpose flour, granulated sugar, baking powder, and salt to the bowl. Thoroughly whisk these dry ingredients together until they are well combined.
2. Combine Wet Ingredients: Next, in a separate medium-sized bowl, crack your two large eggs. Pour in the milk and vanilla extract. Add the optional lemon zest at this stage if you are using it. Whisk these wet ingredients vigorously until everything is smooth and well incorporated.
3. Mix Batter Gently: Now, pour the wet ingredient mixture into the bowl containing the dry ingredients. Use a spatula or wooden spoon to gently stir the batter. Mix just until no streaks of dry flour remain. Be careful not to overmix the batter; a few lumps are perfectly fine and contribute to a tender fritter.
4. Fold in Blueberries: Gently fold the fresh blueberries into the batter. Again, mix minimally to avoid crushing the berries. You want them intact for those lovely bursts of flavor. If you are using frozen blueberries, add them directly from the freezer; do not thaw them.
5. Heat the Oil: Meanwhile, pour 2-3 cups of vegetable oil or canola oil into a large, heavy-bottomed pot or Dutch oven. The oil should be about 2-3 inches deep. Heat the oil over medium heat until it reaches approximately 350-360°F (175-180°C). If you do not have a thermometer, test the oil by dropping a tiny bit of batter into it. It should sizzle immediately and float to the top within 30 seconds.
6. Fry the Fritters: Once the oil is hot, carefully drop spoonfuls of the batter into the hot oil. I usually use a cookie scoop or two spoons to form roughly 1 1/2 to 2-inch fritters. Do not overcrowd the pot; fry only 4-5 fritters at a time to maintain the oil temperature.
7. Cook Until Golden: Fry the fritters for about 2-3 minutes on each side, or until they turn a beautiful golden brown and cook through. They will puff up nicely as they cook.
8. Drain and Serve: Use a slotted spoon or spider to carefully remove the cooked fritters from the oil. Immediately transfer them to a wire rack placed over a baking sheet lined with paper towels.
9. Dust and Enjoy: While the fritters are still warm, lightly dust them with powdered sugar using a fine-mesh sieve. Serve them immediately and watch them disappear!

Do Not Overmix the Batter: This is perhaps the most crucial tip. Overmixing develops the gluten in the flour, leading to tough, chewy fritters. Mix just until the dry ingredients are barely incorporated. A few lumps are perfectly fine and actually contribute to a tender texture.
Maintain Optimal Oil Temperature: The right oil temperature is key for crispy, evenly cooked fritters. Aim for 350-360°F (175-180°C). If the oil is too cool, the fritters absorb too much oil, becoming greasy. If it’s too hot, the outsides brown too quickly, leaving the insides raw. Use a thermometer for accuracy, or test with a small drop of batter.
Use a Cookie Scoop for Uniformity: For consistent size and even cooking, use a spring-loaded cookie scoop (about 1.5 to 2 tablespoons) to drop the batter into the hot oil. This also makes the process much quicker and cleaner.
Do Not Overcrowd the Pot: Fry only a few fritters at a time. Overcrowding significantly drops the oil temperature, leading to greasy fritters. Give them space to swim and cook evenly.
Drain Properly: Always drain cooked fritters on a wire rack set over a baking sheet lined with paper towels. The rack allows air circulation, preventing the bottoms from getting soggy. The paper towels catch any excess oil.
Add Lemon Zest: Even if you are not making a lemon glaze, a teaspoon of fresh lemon zest added to the batter brightens the flavor of the blueberries beautifully. It creates a subtle tang that truly makes the blueberry flavor pop.
Use a Heavy-Bottomed Pot: A Dutch oven or a heavy-bottomed pot helps maintain a consistent oil temperature, which is essential for successful frying. Thin-bottomed pans tend to have fluctuating temperatures.
Serve Immediately: Blueberry fritters taste best fresh and warm, right after frying. The crispy exterior and soft interior are at their peak then.
