Ingredients
2 cups cottage cheese (full-fat or low-fat)
1 cup fresh blueberries, washed and dried
1 tablespoon lemon zest (from about 1–2 organic lemons)
1–2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
Pinch of salt (optional)
Instructions
1. Prepare Your Ingredients: Wash and dry blueberries; zest lemon using a microplane, avoiding white pith.
2. Combine Wet Ingredients: In a medium bowl, add cottage cheese, honey/maple syrup, vanilla, and salt.
3. Mix Thoroughly: Stir until well combined.
4. Add Flavor Boosters: Gently fold in blueberries and lemon zest, being careful not to mash berries.
5. Chill: Cover bowl and refrigerate for at least 30 minutes (or up to overnight) for flavors to meld.
6. Portion and Serve: Use a spoon or small scoop to portion into bowls. Optionally garnish with extra blueberries, zest, or honey drizzle.
Notes
Chilling is essential for best texture and flavor. Use fresh blueberries for best results; if using frozen, thaw and pat dry. Full-fat cottage cheese yields creamiest bites. Adjust sweetness to taste. Store in airtight container in fridge for up to 3-4 days. Not recommended for freezing.
