Ingredients

Boneless, Skinless Chicken Breasts or Thighs (2 lbs)

Long-Grain White Rice (2 cups)

Chicken Broth, low sodium (4 cups)

Olive Oil (2 tablespoons)

Yellow Onion, diced (1 medium)

Garlic, minced (4 cloves)

Bell Peppers, any color, diced (2)

Frozen Peas (1 cup)

Dried Oregano (1 teaspoon)

Smoked Paprika (1 teaspoon)

Cumin (½ teaspoon)

Salt (1 teaspoon)

Black Pepper (½ teaspoon)

Fresh Parsley or Cilantro, chopped (¼ cup)

Instructions

1. Dice chicken into 1-inch pieces. Dice onion and bell peppers. Mince garlic. Measure spices and rice.

2. In a bowl, toss chicken with 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper.

3. Heat remaining 1 tablespoon olive oil in a large pot over medium-high heat. Cook chicken for 5-7 minutes until browned. Remove and set aside.

4. Reduce heat to medium. Add onion and bell peppers to pot; cook for 5-7 minutes until softened. Add garlic, oregano, smoked paprika, and cumin; cook 1 minute.

5. Stir in rice, coating with vegetables and spices. Pour in chicken broth, scraping browned bits. Bring to a boil.

6. Reduce heat to low, cover tightly, and simmer 15-20 minutes until rice is tender and liquid is absorbed. Do not lift lid.

7. Remove from heat. Stir in cooked chicken and frozen peas. Cover and let sit 5 minutes.

8. Fluff with fork. Garnish with parsley or cilantro. Portion into meal prep containers.

Notes

Rinse white rice thoroughly before cooking to remove excess starch for fluffy texture. For brown rice, cook separately per package directions and stir in at the end. Chicken thighs yield juicier results. Cool completely before refrigerating in airtight containers. Store in fridge up to 4 days or freeze up to 3 months. Reheat with a splash of broth if needed.
