Enter our family’s absolute favorite summer (and honestly, any time of year!) meal: these incredible Chipotle Lime Steak Kabobs.

1.52 pounds sirloin steak, cut into 1-inch cubes

¼ cup olive oil

¼ cup lime juice (from 23 limes)

2 tablespoons chipotle peppers in adobo sauce (from 12 peppers, minced, plus adobo sauce)

34 cloves garlic, minced

1 teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

2 large bell peppers (any color), cut into 1-inch pieces

1 large red onion, cut into 1-inch pieces

1 cup cherry tomatoes (optional)

1012 wooden or metal skewers (if wooden, soak for 30 minutes)

Instructions

1. Pat the steak dry with paper towels. Cut into uniform 1-inch cubes.

2. In a medium bowl, combine olive oil, lime juice, chipotle peppers with adobo sauce, minced garlic, cumin, salt, and black pepper. Whisk together.

3. Add cubed steak to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, up to 4 hours.

4. If using wooden skewers, soak them in water for at least 30 minutes. Meanwhile, chop bell peppers and red onion into 1-inch pieces.

5. Thread marinated steak pieces and vegetables alternately onto skewers, distributing evenly.

6. Preheat grill to medium-high heat (400-450°F or 200-230°C). Lightly oil grill grates.

7. Place kabobs on the preheated grill. Grill for 8-12 minutes, turning every 2-3 minutes, until steak reaches desired doneness (medium-rare 135°F, medium 140°F, medium-well 150°F) and vegetables are tender-crisp with char marks.

8. Remove from grill and let rest for 5 minutes before serving. Enjoy!
