4 tablespoons unsalted butter, melted

1 large egg

¾ cup whole milk

1 teaspoon vanilla extract

46 cups vegetable oil (for frying)

For the Chocolate Glaze: 2 cups powdered sugar, sifted

½ cup unsweetened cocoa powder, sifted

2 tablespoons unsalted butter, melted

46 tablespoons milk

½ teaspoon vanilla extract

Instructions

1. Part 1: Making the Donut Dough

2. 1. In a large bowl, whisk together flour, sugar, baking powder, and salt.

3. 2. In a separate bowl, whisk together melted butter, egg, milk, and vanilla.

4. 3. Pour wet ingredients into dry; stir until just combined (do not overmix).

5. 4. Cover bowl with plastic wrap and refrigerate for at least 30 minutes.

6. Part 2: Shaping and Frying

7. 5. Lightly flour a work surface. Turn out chilled dough and dust top with flour.

8. 6. Roll dough to ½-inch thickness.

9. 7. Cut donut shapes using a 3-inch round cutter and a smaller cutter for holes.

10. 8. In a large pot, heat oil to 350°F (175°C) using a candy thermometer.

11. 9. Fry 2-3 donuts at a time for 1-2 minutes per side until golden brown.

12. 10. Transfer to a wire rack lined with paper towels to drain.

13. Part 3: Making the Chocolate Glaze

14. 11. In a medium bowl, whisk together sifted powdered sugar, cocoa powder, melted butter, 4 tablespoons milk, and vanilla.

15. 12. Add more milk, 1 teaspoon at a time, until smooth and pourable.

16. Part 4: Glazing the Donuts

17. 13. While donuts are still warm, dip the top of each into the glaze. Let excess drip off.

18. 14. Place back on wire rack to set. Add toppings immediately if desired.

19. 15. Serve fresh. Enjoy!

Notes

Do not overmix dough to avoid tough donuts. Chilling dough is essential for easier handling and less oil absorption. Maintain oil temperature at 350°F for best results. Glaze donuts while warm for better adherence. Baked option: preheat oven to 375°F, grease donut pan, bake 10-12 minutes. Store glazed donuts at room temperature in an airtight container for up to 2 days. Freeze unglazed donuts for up to 1 month.
