Ingredients
2 cups old-fashioned rolled oats
1 cup cottage cheese (full-fat or low-fat)
1.5 cups milk (any type)
2 large eggs
1/4 cup maple syrup
1 teaspoon vanilla extract
1.5 teaspoons ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
Optional: fresh berries, chopped nuts, extra maple syrup for topping
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
2. In a large bowl, whisk together cottage cheese, milk, eggs, maple syrup, and vanilla extract until well combined.
3. In a separate bowl, mix oats, cinnamon, baking powder, and salt.
4. Pour wet ingredients into dry ingredients and stir until just combined. Gently fold in any optional mix-ins.
5. Pour mixture into prepared baking dish and spread evenly.
6. Bake for 30-35 minutes until golden brown and center is set (toothpick comes mostly clean).
7. Let cool for 5-10 minutes before serving. Serve warm with desired toppings.
Notes
Use old-fashioned rolled oats for best texture; avoid instant oats. For a smoother texture, blend cottage cheese with milk and eggs before mixing. Store leftovers in an airtight container in the fridge for up to 5 days or freeze individual slices for up to 3 months. Reheat in microwave 30-60 seconds or oven at 350°F for 10-15 minutes.
