Cottage cheese bagels offer a high-protein, easy-to-make alternative to traditional bagels, with a chewy interior and crisp crust.

Ingredients

All Purpose Flour: 2 cups (plus more for dusting)

Cottage Cheese (full fat recommended): 1 cup

Baking Powder: 2 teaspoons

Salt: 1 teaspoon

Egg (for egg wash): 1 large

Everything Bagel Seasoning (or other toppings): 2 tablespoons

Instructions

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a large mixing bowl, whisk together the 2 cups of all purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt.

3. Add the 1 cup of cottage cheese to the dry ingredients. Use a sturdy spoon or your hands to mix everything together until it starts to form a dough.

4. Turn the dough out onto a lightly floured surface. Knead it gently for about 3-5 minutes until smooth and elastic. Add a little extra flour if sticky.

5. Divide the dough into 6 equal pieces. Roll each piece into a ball. Use your thumb or finger to create a hole in the center of each ball, stretching to about 1 inch in diameter.

6. In a small bowl, whisk the large egg with a tablespoon of water to create an egg wash.

7. Place the shaped bagels on the prepared baking sheet. Brush the tops and sides with egg wash. Sprinkle with everything bagel seasoning (or other toppings).

8. Bake for 20-25 minutes, until golden brown and they sound hollow when tapped on the bottom.

9. Transfer to a wire rack to cool slightly. Serve warm.

Notes

For best results, use full fat cottage cheese. If dough is too wet, add extra flour one tablespoon at a time. If too dry, add a splash of milk. Ensure the hole in the center is about 1 inch to prevent closing during baking. Bagels can be stored at room temperature for up to 3 days, refrigerated for 5-7 days, or frozen for up to 3 months. Reheat in toaster or oven.
