Ingredients
3 large ripe bananas
1 cup full-fat cottage cheese
2 large eggs
1/4 cup melted coconut oil (or unsalted butter)
1/4 cup maple syrup (or honey)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup optional add-ins (chocolate chips, walnuts, pecans)
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
2. In a large bowl, mash the bananas with a fork until mostly smooth.
3. In a blender, process cottage cheese until completely smooth.
4. Add blended cottage cheese, eggs, melted coconut oil, maple syrup, and vanilla extract to the mashed bananas. Whisk until well combined.
5. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
6. Gradually add dry ingredients to wet ingredients, mixing gently with a spatula until just combined. Do not overmix.
7. If using, fold in chocolate chips or nuts.
8. Pour batter into prepared pan. Smooth the top.
9. Bake for 50-65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
10. Cool in pan on a wire rack for 10-15 minutes. Then remove from pan and cool completely before slicing.
Notes
Use very ripe bananas for best sweetness. Do not overmix the batter. Blend cottage cheese until smooth for best texture. Store at room temperature for 2-3 days, refrigerate for up to 5-7 days, or freeze for up to 3 months.
