Emilia’s Cottage Cheese Breadsticks are a healthier, protein-packed twist on classic breadsticks. They are incredibly easy to make, perfectly crispy on the outside and soft inside, with a savory garlic and parmesan flavor that even picky eaters love.

  • Total Time: 32 minutes
  • Yield: 8-10 breadsticks

Ingredients

Cottage Cheese, 1 cup

Egg, 1 large

All Purpose Flour, ¾ cup

Baking Powder, 1 teaspoon

Garlic Powder, ½ teaspoon

Onion Powder, ¼ teaspoon

Salt, ¼ teaspoon

Black Pepper, ⅛ teaspoon

Shredded Parmesan Cheese, ½ cup

Melted Butter, 2 tablespoons

Dried Parsley or Italian Seasoning, 1 teaspoon

Instructions

1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

2. In a medium bowl, whisk together cottage cheese and egg until well combined and cottage cheese breaks down slightly.

3. Add flour, baking powder, garlic powder, onion powder, salt, and black pepper. Mix until just combined; do not overmix.

4. Gently fold in ½ cup shredded Parmesan cheese.

5. Turn dough onto prepared baking sheet. Press into an 8×10 inch rectangle about ½ inch thick.

6. Using a sharp knife or pizza cutter, slice dough into 1-inch wide strips (do not separate).

7. Brush tops with melted butter.

8. Sprinkle extra Parmesan and dried parsley or Italian seasoning over the top.

9. Bake for 20-25 minutes until golden brown and firm.

10. Cool on sheet for a few minutes, then separate breadsticks. Serve warm.

Notes

Do not overmix dough to avoid tough breadsticks. Use parchment paper for easy removal. Ensure even thickness when shaping. Full fat or low fat cottage cheese works; small or large curd is fine. For gluten-free, use a 1:1 gluten-free baking blend containing xanthan gum. Dairy-free option: use dairy-free cottage cheese or mashed firm tofu, adjusting seasonings. Flavor variations: increase garlic powder, add everything bagel seasoning, red pepper flakes, or fresh herbs. Store at room temperature up to 2 days, refrigerate up to 5 days, or freeze up to 3 months. Reheat in oven at 350°F for 5-10 minutes (refrigerated) or 10-15 minutes (frozen), or in air fryer at 350°F for 3-5 minutes.
