2 cups cottage cheese (full-fat or low-fat)
2–3 tablespoons maple syrup (or honey/agave/sugar substitute)
1 teaspoon vanilla extract
1/2 cup fresh berries (strawberries, blueberries, raspberries)
1/4 cup granola
Optional toppings: nuts, seeds, chocolate chips, coconut flakes, fruit zest
Instructions
1. 1. Line a rimmed baking sheet (9×13-inch) with parchment paper, leaving overhang.
2. 2. In a blender or food processor, combine cottage cheese, sweetener, and vanilla extract. Blend until completely smooth and creamy.
3. 3. Pour the mixture onto the prepared baking sheet and spread evenly into a 1/4 to 1/2 inch thick layer.
4. 4. Scatter berries and granola (plus any other desired toppings) over the mixture, gently pressing them in.
5. 5. Freeze for at least 3-4 hours, or until completely solid (overnight is best).
6. 6. Remove from freezer, lift out using parchment paper, and break into irregular pieces.
7. 7. Serve immediately or store in an airtight container in the freezer.
Notes
Use full-fat cottage cheese for creamiest texture. For dairy-free, try thick plant-based yogurt (like coconut or almond). Frozen fruit can be used if thawed and patted dry. Store in freezer for up to 2-3 weeks. Let sit at room temperature for 5-10 minutes if desired softer texture.
