  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Ingredients

Scale

1 cup cottage cheese (full-fat or low-fat)

½ cup cherry tomatoes, halved

¼ cup fresh mozzarella balls (bocconcini or ciliegine), halved or quartered

23 tablespoons fresh basil leaves, roughly chopped or torn

12 tablespoons balsamic glaze

1 teaspoon extra virgin olive oil (optional)

Pinch of salt, to taste

Pinch of black pepper, freshly ground, to taste

Instructions

1. 1. Spoon the full cup of cottage cheese into the bottom of your favorite bowl and spread it evenly.

2. 2. Arrange the halved cherry tomatoes over the cottage cheese.

3. 3. Add the halved or quartered fresh mozzarella balls, nestling them among the tomatoes.

4. 4. Sprinkle a generous amount of fresh basil leaves over all the ingredients.

5. 5. Drizzle 1-2 tablespoons of balsamic glaze over the bowl. Add optional olive oil if desired.

6. 6. Season with a pinch of salt and a grind of black pepper. Taste and adjust as needed.

7. 7. Serve immediately and enjoy.

Notes

For best flavor, use ripe cherry tomatoes and fresh basil. Chill the cottage cheese and mozzarella before assembling for a refreshing bowl. Balsamic glaze can be store-bought or homemade by reducing balsamic vinegar. This recipe is highly customizable—add chicken, chickpeas, or greens for extra protein and nutrients.
