1 cup full-fat cottage cheese
1 teaspoon vanilla extract
2–3 tablespoons maple syrup (or honey)
2 tablespoons almond flour
Pinch of salt
1/4 cup mini chocolate chips
Instructions
1. 1. Place cottage cheese, vanilla extract, maple syrup, and salt in a blender or food processor. Blend until completely smooth, scraping down sides as needed.
2. 2. Add almond flour and blend briefly until incorporated.
3. 3. Transfer mixture to a bowl and fold in chocolate chips.
4. 4. For best texture, refrigerate for at least 30 minutes.
5. 5. Serve chilled or at room temperature.
Notes
For a thicker dough, chill longer. For a dairy-free version, use plant-based cottage cheese. For a nut-free version, substitute almond flour with oat flour (heat-treated). Sweetness can be adjusted to taste. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 1 month.
