1 package (2 1/4 tsp) active dry yeast
1 tbsp granulated sugar
1/2 cup warm water (105-115°F)
1 large egg
1/2 cup small curd cottage cheese
3 tbsp unsalted butter, melted
3 cups all-purpose flour
1 tsp salt
Instructions
1. 1. Activate the Yeast: In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
2. 2. Add Wet Ingredients: Add egg, cottage cheese, and melted butter to the yeast mixture. Mix well.
3. 3. Combine Dry Ingredients: In a separate bowl, whisk together flour and salt.
4. 4. Form the Dough: Gradually add flour mixture to wet ingredients, mixing until a shaggy dough forms.
5. 5. Knead the Dough: Knead (by hand or with a stand mixer) for 7-10 minutes until smooth and elastic.
6. 6. First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 1-1.5 hours until doubled.
7. 7. Shape the Rolls: Punch down dough, divide into 12 equal pieces, and roll into smooth balls.
8. 8. Second Rise: Arrange rolls in a greased 9×13-inch baking dish, cover, and let rise for 30-45 minutes until puffy.
9. 9. Preheat Oven & Prepare: Preheat oven to 375°F (190°C). Brush tops with melted butter or egg wash if desired.
10. 10. Bake: Bake for 18-22 minutes until golden brown. Rotate pan halfway through.
11. 11. Cool and Serve: Brush with more butter if desired. Cool slightly before serving warm.
Notes
Ensure yeast is active by checking for foam. Water temperature should be lukewarm (105-115°F). For make-ahead, after shaping, refrigerate overnight and let come to room temperature before baking. Rolls can be frozen for up to 2-3 months.
