This Cottage Cheese Egg Bake is a high-protein, easy breakfast casserole that’s perfect for busy mornings. Packed with protein from eggs and cottage cheese, it’s creamy, customizable, and baked to golden perfection. A family-friendly solution for stress-free mornings.

  • Total Time: 50 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

12 large eggs

16 ounces cottage cheese (full-fat or low-fat)

1 cup shredded cheese (cheddar, Monterey Jack, or blend)

1/4 cup milk (whole, 2%, or unsweetened almond)

2 tablespoons all-purpose flour (or gluten-free blend)

1/2 teaspoon salt

1/4 teaspoon black pepper

Unsalted butter or cooking spray for greasing

Optional add-ins: sautéed vegetables, cooked meats, herbs

Instructions

1. Preheat your oven to 350°F (175°C). Generously grease a 9×13-inch baking dish with butter or cooking spray.

2. In a large mixing bowl, crack all 12 large eggs and whisk vigorously until yolks and whites are fully combined and slightly frothy.

3. Add the cottage cheese and milk to the whisked eggs, stirring gently until just combined (keep some curds intact).

4. Sprinkle the all-purpose flour, salt, and black pepper over the egg mixture and stir until just incorporated.

5. Gently fold in the shredded cheese and any optional add-ins (sautéed vegetables, cooked meats, herbs) until evenly distributed.

6. Pour the entire mixture into the prepared baking dish, spreading evenly with a spatula.

7. Bake for 35-45 minutes until the top is golden brown, the center is set, and a knife inserted into the center comes out clean.

8. Remove from the oven and let cool for 5-10 minutes before slicing and serving. Garnish with fresh herbs if desired.

Notes

For best results, sauté vegetables first to remove excess moisture. Let the bake rest after cooking for cleaner slices. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months. Reheat in microwave, oven (300°F, 10-15 min), or air fryer (325°F, 5-8 min).
