Ingredients

16 oz full-fat cottage cheese (about 2 cups)

2 large eggs

1/2 cup all-purpose flour

1/2 tsp baking powder

1/2 tsp garlic powder

1/4 tsp onion powder

1 tsp dried Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

12 tsp olive oil (for greasing)

Instructions

1. 1. Preheat oven to 375°F (190°C). Line a large baking sheet (13×18 inches) with parchment paper. Lightly grease parchment with 1-2 teaspoons olive oil.

2. 2. In a blender, combine cottage cheese and eggs. Blend until completely smooth, about 30-60 seconds.

3. 3. Add all-purpose flour, baking powder, garlic powder, onion powder, Italian seasoning, salt, and pepper. Blend again until just combined. Do not overmix.

4. 4. Pour batter onto prepared baking sheet. Spread evenly into a thin rectangle, about 1/4 to 1/3 inch thick.

5. 5. Bake for 18-22 minutes, until golden brown around edges and set in the center. Surface should feel firm.

6. 6. Cool on baking sheet for 5-10 minutes. Transfer to cutting board, slice into desired shapes, and serve with toppings or dips.

Notes

For best texture, use full-fat cottage cheese and blend until very smooth. Do not overmix after adding flour. Spread batter evenly to ensure even baking. Let cool before cutting to prevent tearing. Store in refrigerator up to 4 days, or freeze up to 2 months. Reheat in oven or air fryer for best results.
