Ingredients
2 cups (16 oz) full-fat cottage cheese
2 large eggs
2 tablespoons all-purpose flour (optional, omit for gluten-free)
1 teaspoon garlic powder
1 teaspoon dried oregano or Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. 1. Preheat oven to 400°F (200°C). Line a 9×13-inch baking sheet with parchment paper and lightly grease.
2. 2. In a blender, combine cottage cheese, eggs, flour (if using), garlic powder, oregano, salt, and pepper. Blend until completely smooth, about 30-60 seconds. Scrape sides as needed.
3. 3. Pour batter onto prepared baking sheet. Spread evenly to about ¼-inch thickness.
4. 4. Bake for 20-30 minutes until edges are golden brown and center is firm. For crispier flatbread, bake longer.
5. 5. Let cool on baking sheet for 5-10 minutes before transferring to a wire rack. Slice and serve.
Notes
For best texture, use full-fat cottage cheese. Blend until very smooth to avoid lumps. Parchment paper is essential to prevent sticking. Adjust thickness and baking time for desired consistency. Store leftovers in an airtight container in the fridge for 3-4 days. Freeze for up to 3 months. Reheat in oven or toaster oven for crispiness.
