Instructions
1. 1. Gather your ingredients: 16 ounces cottage cheese, your chosen sweetener (2-4 tablespoons), and 1 teaspoon vanilla extract.
2. 2. Add to blender: Scoop all the cottage cheese into a high-speed blender or food processor. Add the sweetener and the vanilla extract.
3. 3. Blend until smooth: Secure the lid and blend on high speed. Initially, the mixture will look chunky. Keep blending for at least 2-3 minutes, or until the mixture is completely smooth and creamy, with no visible curds. Stop periodically to scrape down the sides of the blender with a spatula.

Notes
For a thicker mousse, use full-fat cottage cheese and blend very well. Chilling for several hours helps it firm up. For a lighter mousse, use low-fat or non-fat cottage cheese and blend in 1-2 tablespoons of milk or water. Store in an airtight container in the refrigerator for up to 3-4 days.
