Ingredients
1 cup (225g) full-fat cottage cheese
1 cup (120g) all-purpose flour, plus more for dusting
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon garlic powder (optional)
2 tablespoons melted butter or olive oil, for brushing
1 tablespoon fresh parsley or cilantro, chopped (optional)
Instructions
1. In a large mixing bowl, combine the cottage cheese, flour, baking powder, salt, and optional garlic powder. Mix until a shaggy dough forms.
2. Turn the dough onto a lightly floured surface and knead for 1-2 minutes until smooth and slightly tacky. If too sticky, add a little more flour a teaspoon at a time.
3. Divide the dough into 6 equal pieces and roll each into a ball.
4. On a floured surface, roll each ball into an oval or round shape about ¼-inch thick.
5. Heat a cast-iron skillet or heavy-bottomed non-stick pan over medium-high heat until very hot.
6. Place one rolled naan into the dry hot pan. Cook for 2-3 minutes per side, until golden brown spots appear and the naan puffs up.
7. Transfer to a plate and immediately brush with melted butter or olive oil. Sprinkle with fresh parsley or cilantro if desired.
8. Repeat with remaining dough. Stack cooked naan and cover with a clean kitchen towel to keep warm and soft.
Notes
Use full-fat cottage cheese for the best texture. The dough should be soft and slightly tacky, not sticky. Cook the naan in a dry pan – brush with butter after cooking. For gluten-free, use a 1:1 gluten-free baking blend, but the texture may differ. For more flavor, add herbs or spices to the dough. Store cooled leftovers in an airtight container for up to 3 days at room temperature, or freeze for up to 2 months with parchment between each naan. Reheat in a dry skillet for 30-60 seconds per side recommended.
