A simple yet gourmet homemade pizza featuring deeply caramelized sweet onions, bubbly mozzarella, and nutty Parmesan on a crispy crust, perfect for a cozy family dinner.

  • Total Time: 1 hour
  • Yield: 1 (12-inch) pizza 1x

Ingredients

Scale

34 large yellow onions

2 tablespoons olive oil

1 tablespoon butter

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound pizza dough

1.5 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon chopped fresh thyme (optional)

12 tablespoons balsamic glaze (optional)

Instructions

1. Step 1: Thinly slice the yellow onions. Heat olive oil and butter in a large skillet over medium-low heat. Add onions, salt, and pepper; stir to coat. Cook slowly, stirring occasionally, for 30-45 minutes until deeply golden, tender, and sweet. Remove from heat and set aside.

2. Step 2: Preheat oven to 450°F (230°C). If using a pizza stone or steel, place it in the oven to preheat. Lightly flour a work surface. Stretch or roll dough into a 12-14 inch circle. Transfer to parchment paper or floured pizza peel.

3. Step 3: Brush the edges of the dough with olive oil. Spread caramelized onions evenly, leaving a border. Sprinkle mozzarella, then Parmesan. Scatter fresh thyme if using.

4. Step 4: Carefully slide the pizza onto the preheated stone or baking sheet. Bake for 12-18 minutes until crust is golden and cheese is bubbly and lightly browned.

5. Step 5: Remove from oven. Drizzle with balsamic glaze if desired. Let rest 2-3 minutes before slicing. Serve immediately.

Notes

Do not rush the onions; low and slow is key. Use high-quality store-bought or homemade pizza dough. Preheat oven thoroughly with a stone or steel for a crispy crust. Do not overload toppings. For variations: try red or sweet onions, goat cheese or fontina, and add bacon or mushrooms if desired. Leftovers can be stored in the fridge for 3-4 days or frozen for 1-2 months; reheat in oven or skillet for best results.
