Ingredients
4 (8-10 inch) flatbreads (naan, pizza crust, or pita)
2 cups cooked chicken, shredded or diced
1/2 cup BBQ sauce, plus more for drizzling
1 1/2 cups shredded mozzarella cheese
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
1. Preheat oven to 400°F (200°C). In a bowl, toss cooked chicken with half the BBQ sauce until coated. Brush each flatbread with olive oil on both sides and place on a baking sheet. Spread remaining BBQ sauce over flatbreads, then top with BBQ chicken, mozzarella cheese, and red onion. Bake for 10-15 minutes, until cheese is bubbly and edges are golden. Garnish with fresh cilantro, slice, and serve hot.
Notes
For a crispier crust, pre-bake flatbreads for 2-3 minutes before adding toppings. Use rotisserie chicken to save time. Customize with bell peppers, jalapeños, or different cheeses. Leftovers keep in the refrigerator for 3-4 days; reheat in oven or air fryer for best texture.
