Ingredients
Cooked Corned Beef: 1.5 lbs (shredded or diced)
Sauerkraut: 24 oz (1 large jar, well-drained and squeezed)
Cream Cheese: 8 oz (full-fat, softened)
Mayonnaise: 1/2 cup (full-fat)
Sugar-Free Ketchup: 2 tbsp
Dill Pickle Relish: 2 tbsp (sugar-free)
Worcestershire Sauce: 1 tsp
Garlic Powder: 1/2 tsp
Onion Powder: 1/2 tsp
Salt & Black Pepper: to taste
Swiss Cheese: 8 oz (2 cups, shredded)
Pork Rind Crumbs: 1/4 cup (optional)
Instructions
1. 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. 2. Shred or dice cooked corned beef into bite-sized pieces. Spread evenly in the dish. Season with salt and pepper.
3. 3. Thoroughly drain sauerkraut, pressing out excess liquid with paper towels. Spread over corned beef.
4. 4. In a medium bowl, combine softened cream cheese, mayonnaise, sugar-free ketchup, dill pickle relish, Worcestershire sauce, garlic powder, and onion powder. Mix until smooth. Adjust seasoning to taste.
5. 5. Spoon and spread the dressing evenly over the sauerkraut layer.
6. 6. Sprinkle shredded Swiss cheese over the top. If using, scatter pork rind crumbs over the cheese.
7. 7. Bake for 25-30 minutes, until bubbling and cheese is melted and golden brown.
8. 8. Let rest for 5-10 minutes before slicing and serving.
Notes
Thoroughly drain sauerkraut to avoid a watery casserole. Soften cream cheese to room temperature for a smooth dressing. Season the corned beef layer lightly. Freshly grate cheese for better melt. Let casserole rest before serving. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in oven at 325°F covered for best texture.
If you don’t like sauerkraut, rinse it or substitute finely shredded sautéed cabbage. For spice, add cayenne or hot sauce to the dressing. Use pastrami or turkey as a meat alternative. Dairy-free options exist but may alter texture.
