1.5 lbs Ground Beef (80/20 lean)

1/2 cup Breadcrumbs (Panko or regular)

1/4 cup Grated Parmesan Cheese

1 large Egg

2 cloves Garlic, minced

1 tbsp Worcestershire Sauce

1 tsp Onion Powder

1/2 tsp Salt

1/4 tsp Black Pepper

2 tbsp Olive Oil (for searing)

2 tbsp Butter

1 tbsp Olive Oil

1 large Shallot, finely diced

3 cloves Garlic, minced

2 tbsp All-purpose Flour

2 cups Beef Broth

1/2 cup Milk or Half & Half

1/2 cup Grated Parmesan Cheese

1 tbsp Fresh Parsley, chopped (optional)

Salt & Black Pepper to taste

Instructions

1. Step 1: Prepare the Patties. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, minced garlic (from steaks section), Worcestershire sauce, onion powder, salt, and pepper. Mix gently until just combined. Divide into 4-6 oval patties, about 1 inch thick, and make a slight indentation in the center.

2. Step 2: Cook the Steaks. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear patties for 4-5 minutes per side until golden brown and cooked to 160°F (71°C). Remove and set aside; do not wipe the pan.

3. Step 3: Make the Gravy. Reduce heat to medium. Add butter and 1 tbsp oil to the pan, scraping up browned bits. Sauté shallot for 3-4 minutes until softened. Add minced garlic (from gravy section); cook 1 minute. Sprinkle flour and whisk for 1-2 minutes. Gradually whisk in beef broth, then milk. Simmer 3-5 minutes until thickened. Remove from heat; stir in Parmesan. Season with salt and pepper.

4. Step 4: Combine and Serve. Return patties to the skillet, spoon gravy over them. Simmer gently for 5-10 minutes. Garnish with parsley and serve immediately.

Notes

Avoid overmixing the beef to keep patties tender. Always preheat the pan well for a good sear. Fond adds flavor to gravy. For gluten-free, use GF breadcrumbs and flour. For a richer gravy, add sautéed mushrooms or a swirl of dijon mustard. Leftovers keep refrigerated for 3-4 days.
