Ingredients
1 ½ cups all-purpose flour
½ cup vanilla protein powder
½ cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup plain Greek yogurt
2 large eggs
¼ cup unsweetened applesauce
¼ cup milk
1 teaspoon vanilla extract
¾ cup mini chocolate chips
Instructions
1. Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease each cup.
2. In a large bowl, whisk together flour, protein powder, sugar, baking powder, baking soda, and salt.
3. In a separate medium bowl, whisk together Greek yogurt, eggs, applesauce, milk, and vanilla until smooth.
4. Pour wet ingredients into dry; mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
5. Fold in chocolate chips; reserve a few for topping if desired.
6. Divide batter evenly among muffin cups, filling each about two-thirds full. Sprinkle reserved chips on top.
7. Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean.
8. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best texture, do not overmix. Use room temperature eggs and yogurt. Store in an airtight container at room temperature for 2-3 days, refrigerate for up to 5-7 days, or freeze for up to 3 months. Reheat in microwave for 15-30 seconds or in toaster oven at 300°F for 5-7 minutes.
