This Grilled Peach Burrata Chicken Salad combines sweet, smoky grilled peaches with creamy burrata cheese and tender, savory chicken on a bed of mixed greens, all dressed in a tangy balsamic vinaigrette. It’s a quick, gourmet meal perfect for summer.

2 boneless, skinless chicken breasts (about 1 lb)

1 tbsp olive oil (for chicken)

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

2–3 ripe but firm peaches

1 tsp olive oil (for peaches)

5 oz (about 5 cups) mixed greens (spring mix, arugula, or spinach)

1 ball (8 oz) burrata cheese, at room temperature

1/4 cup fresh basil leaves, torn

3 tbsp extra virgin olive oil (for dressing)

2 tbsp balsamic vinegar

1 tsp Dijon mustard

1/2 tsp honey or maple syrup (optional)

Salt and black pepper to taste (for dressing)

Instructions

1. Pat chicken breasts dry and pound to 3/4-inch thickness. Rub with 1 tbsp olive oil, salt, pepper, and garlic powder. Let marinate 15 minutes.

2. Preheat grill to medium-high heat (400-450°F). Clean and oil grates.

3. Halve peaches and remove pits. Lightly brush cut sides with 1 tsp olive oil.

4. Grill chicken 5-7 minutes per side until internal temp reaches 165°F. Rest 5 minutes, then slice.

5. Grill peaches cut-side down 2-4 minutes until marked and softened. Slice into wedges.

6. Whisk together 3 tbsp olive oil, balsamic vinegar, Dijon mustard, honey (if using), salt, and pepper for dressing.

7. Toss mixed greens with half the dressing. Arrange on a platter or plates.

8. Top with sliced chicken, peach wedges, and torn basil. Tear burrata into pieces and nestle on top.

9. Drizzle remaining dressing over salad. Serve immediately.

Notes

For best results, use ripe but firm freestone peaches. Bring burrata to room temperature before serving. Store components separately if making ahead: chicken and peaches keep 2-3 days in fridge. No grill? Pan-sear chicken and peaches in a hot skillet.
