Start your day with these irresistible Keto Breakfast Sandwich Chaffles! Crispy on the outside, cheesy on the inside, and packed with protein, they’re ready in just 10 minutes and perfect for busy low-carb mornings.

  • Total Time: 11 minutes
  • Yield: 1 sandwich (2 chaffles with fillings) 1x

Ingredients

Scale

1/2 cup shredded mozzarella cheese (low-moisture, part-skim)

1 large egg

1 tbsp almond flour

1/4 tsp baking powder

1/4 tsp garlic powder

pinch salt

pinch black pepper

cooking spray (as needed)

1/2 tbsp butter (optional, for extra crisp)

For filling:

2 slices cooked bacon

1 fried egg

1/4 avocado (sliced)

drizzle hot sauce (optional)

Instructions

1. 1. Plug in your mini waffle maker and allow it to preheat completely. Spray cooking plates generously with cooking spray.

2. 2. In a small bowl, whisk together almond flour, baking powder, garlic powder, salt, and black pepper.

3. 3. Add shredded mozzarella cheese and the large egg to the dry ingredients. Mix with a fork until just combined (batter will be thick and sticky).

4. 4. Scoop half of the batter onto the center of the preheated waffle iron. Close the lid gently.

5. 5. Cook for 3-5 minutes until golden brown and crispy. Do not peek early.

6. 6. Carefully remove chaffle with a fork and place on a wire rack to cool slightly. Repeat with remaining batter to make second chaffle.

7. 7. Optionally, brush chaffles with melted butter and toast in a hot skillet for extra crispiness.

8. 8. Assemble sandwich: layer cooked bacon, fried egg, sliced avocado, and hot sauce (if using) between the two chaffles. Serve immediately.

Notes

Pro Tips: Preheat waffle iron thoroughly for crispiness. Use low-moisture cheese. Don’t overfill the iron. Resist peeking early. For extra crunch, toast after cooking. Storage: Cooked chaffles keep in an airtight container in the fridge for 3-4 days or frozen for up to 1 month. Reheat in toaster, toaster oven, or air fryer for best crispness. Variations: Swap mozzarella for cheddar, Monterey Jack, or provolone. Substitute almond flour with 1/2 tbsp coconut flour if needed. Add Everything Bagel Seasoning or smoked paprika for different flavors. Fillings can include sausage, ham, smoked salmon, or sugar-free jam. Also great for lunch sandwiches, mini pizzas, or burger buns. Dessert version: omit garlic powder, add sweetener and vanilla extract.
