These keto crispy Reuben roll-ups are a low-carb, gluten-free twist on the classic Reuben sandwich. Made with a cream cheese and egg wrapper, filled with corned beef, Swiss cheese, and sauerkraut, they are baked to crispy perfection and served with sugar-free Thousand Island dressing. 8 oz cream cheese, softened

2 large eggs

1 tbsp everything bagel seasoning

8 oz thinly sliced deli corned beef

68 slices Swiss cheese

1/2 cup sauerkraut, well-drained

Sugar-Free Thousand Island dressing, for serving

Fresh dill or parsley, chopped (optional for garnish)

Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together softened cream cheese and eggs until smooth and lump-free. Stir in everything bagel seasoning.

3. Pour the cream cheese mixture onto the prepared baking sheet and spread into a thin, even rectangle (about 10×12 inches).

4. Bake for 12-15 minutes, until set and lightly golden around the edges. Let cool on the baking sheet for a few minutes.

5. Once cool enough to handle, lay Swiss cheese slices over the entire base. Arrange corned beef slices evenly over the cheese. Sprinkle well-drained sauerkraut over the corned beef.

6. Starting from one long side, carefully roll the rectangle into a tight log, using the parchment paper to help.

7. Slice the log into 12-16 individual roll-ups (about 1-1.5 inches thick).

8. Place roll-ups cut-side down on the same parchment-lined baking sheet, not touching. Bake for another 15-20 minutes, until golden brown and crispy.

9. Let cool slightly, garnish with dill or parsley if desired, and serve with sugar-free Thousand Island dressing for dipping.

Notes

Ensure sauerkraut is very well-drained to avoid sogginess. An offset spatula helps spread the cream cheese mixture evenly.
