Milk (any kind), 1 cup

Fresh lemon zest, 1 tablespoon (from 1-2 lemons)
Fresh blueberries, 1 cup
Vegetable oil or canola oil, 3-4 cups (for frying)
Powdered sugar, 1 cup
Fresh lemon juice, 2-3 tablespoons
Instructions
1. 1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
2. 2. In a separate bowl, beat the egg, then whisk in milk, melted butter, and lemon zest.
3. 3. Pour wet ingredients into dry; stir until just combined (lumps are okay).
4. 4. Gently fold in blueberries.
5. 5. Heat oil in a heavy pot to 350-375°F (175-190°C).
6. 6. Drop tablespoonfuls of batter into the hot oil, working in batches to avoid overcrowding.
7. 7. Fry for 2-3 minutes per side until golden brown.
8. 8. Remove with a slotted spoon and drain on a wire rack over paper towels.
9. 9. Whisk together powdered sugar and lemon juice for the glaze.
10. 10. Glaze warm fritters and serve immediately.
Notes
Do not overmix the batter to keep fritters light. Maintain oil temperature between 350-375°F. For frozen blueberries, toss in flour before folding in to prevent sinking. Fritters are best fresh; reheat in oven or air fryer for crispness.
