Ingredients
4 cod fillets (about 6 oz each)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
4 tablespoons unsalted butter
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
1. Pat cod fillets dry with paper towels. Season both sides with salt, pepper, and garlic powder.
2. Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
3. Sear cod for 3-5 minutes per side until golden brown and flaky. Transfer to a plate and cover loosely with foil.
4. Reduce heat to medium-low. Add butter to the skillet, scraping up browned bits. Stir in lemon juice and parsley.
5. Spoon sauce over cod and serve immediately.
Notes
For the best sear, pat fish extremely dry. Don’t overcrowd the pan—cook in batches if needed. Use fresh lemon juice for optimal brightness. Reheat gently at 275°F (135°C) in the oven to avoid drying out. Store leftovers in the refrigerator for up to 2-3 days.
