Ingredients
1.5 cups (about 375g) Non-fat Greek Yogurt, plain unsweetened
1 scoop (approx. 25-30g) Vanilla Protein Powder (whey or plant based)
3 tablespoons Lemon Juice, freshly squeezed
1 teaspoon Lemon Zest, fresh
1–2 tablespoons Sweetener of Choice (honey, maple syrup, stevia, or erythritol)
1/2 teaspoon Vanilla Extract
Optional toppings: fresh berries, granola, lemon slices, whipped cream
Instructions
1. 1. Grab a medium-sized mixing bowl.
2. 2. Spoon 1.5 cups of non-fat Greek yogurt into the bowl.
3. 3. Add 1 scoop of vanilla protein powder directly over the yogurt.
4. 4. Pour in 3 tablespoons of fresh lemon juice and 1 teaspoon of lemon zest.
5. 5. Add 1-2 tablespoons of sweetener (to taste) and 1/2 teaspoon of vanilla extract.
6. 6. Whisk vigorously for 2-3 minutes until the mixture is light, airy, and increased in volume, smooth and free of protein powder lumps.
7. 7. Taste and adjust lemon juice, zest, or sweetener if needed. Whisk for another 30 seconds.
8. 8. Optional: Cover and refrigerate for at least 30 minutes for best texture and flavor.
9. 9. Spoon into serving bowls, top with desired garnishes, and serve immediately.
Notes
Use cold ingredients for best fluffiness. Fresh lemon juice and zest are crucial for vibrant flavor. Whisk vigorously to incorporate air. Adjust sweetness to taste based on your protein powder and sweetener. Chilling is recommended but not required. Store leftovers in an airtight container in the fridge for up to 3-4 days. Not suitable for freezing.
