1 large head cauliflower (about 2 lbs), cut into bite-sized florets

34 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper, freshly ground

56 garlic cloves, minced

½ cup sun-dried tomatoes (oil-packed), drained and chopped

½ cup chicken or vegetable broth

½ cup heavy cream

½ cup Parmesan cheese, freshly grated, plus extra for serving

2 tablespoons fresh parsley, chopped (for garnish, optional)

¼ teaspoon red pepper flakes (optional)

Instructions

1. 1. Preheat oven to 400°F (200°C). Wash and thoroughly dry the cauliflower. Chop into bite-sized florets.

2. 2. Spread cauliflower florets in a single layer on a large baking sheet. Drizzle with 2 tablespoons olive oil. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Toss to coat evenly. Roast for 20-25 minutes, shaking the pan halfway through, until tender-crisp and caramelized.

3. 3. While cauliflower roasts, heat remaining 1-2 tablespoons olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant.

4. 4. Stir in chopped sun-dried tomatoes. Pour in broth. Bring to a gentle simmer and cook for 2-3 minutes, letting the liquid reduce slightly.

5. 5. Reduce heat to low. Stir in heavy cream and half the grated Parmesan. Stir until cheese melts and sauce thickens slightly, about 2-3 minutes. Season with salt and pepper to taste.

Notes

For extra crispy cauliflower, ensure florets are very dry before roasting and do not overcrowd the baking sheet. For a dairy-free/vegan version, use unsweetened plant-based cream (cashew or oat) and omit Parmesan or use vegan Parmesan; use vegetable broth. Leftovers keep in the fridge for 3-4 days; reheat in a 350°F oven or air fryer to restore crispness. Frozen cauliflower can be used but roast first to evaporate moisture, then add oil and seasonings and continue roasting until tender.
