Ingredients
1.5 lbs Ground Turkey (93% lean or higher)
4 oz Feta Cheese (crumbled)
½ cup Breadcrumbs (Panko or regular)
1 large Egg
2 tablespoons Milk (any kind or water)
¼ cup Red Onion (finely minced)
2 cloves Garlic (minced)
¼ cup Fresh Parsley (chopped)
1 teaspoon Dried Oregano
¾ teaspoon Salt
½ teaspoon Black Pepper
1 tablespoon Olive Oil (for drizzling)
Instructions
1. 1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. 2. In a small bowl, finely mince onion and garlic. Chop parsley.
3. 3. In a large mixing bowl, combine ground turkey, crumbled feta, minced onion, garlic, parsley, oregano, salt, and pepper.
4. 4. Add the egg, milk, and breadcrumbs. Mix gently with hands until just combined.
5. 5. Scoop about 1.5 tablespoons of mixture per meatball, roll into 1-1.5 inch balls, and place on prepared baking sheet.
6. 6. Drizzle olive oil over meatballs.
7. 7. Bake for 18-22 minutes, until golden brown and internal temperature reaches 165°F (74°C).
8. 8. Let rest 2 minutes before serving.
Notes
Do not overmix the meat to keep meatballs tender. For uniform size, use a cookie scoop. To prevent sticking when rolling, dampen hands with water. Make ahead: form meatballs and refrigerate up to 24 hours before baking. Freeze cooked or uncooked meatballs for up to 3 months.
