Ingredients
1 box (1 lb) phyllo dough, thawed
1 (8 oz) block feta cheese, crumbled or cut into sticks
1/4 cup olive oil
1/2 cup honey
1–2 teaspoons red pepper flakes
1 teaspoon apple cider vinegar
Pinch of salt
Instructions
1. 1. Thaw phyllo dough according to package directions. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Keep phyllo covered with a damp towel.
2. 2. Prepare feta: crumble or cut into sticks.
3. 3. Lay one sheet of phyllo on a work surface, brush lightly with olive oil. Top with a second sheet and brush with oil.
4. 4. Place a spoonful of feta or one stick at the short end, about 1 inch from edge. Fold short edge over filling, fold in sides, then roll tightly. Place seam-side down on baking sheet.
5. 5. Repeat with remaining phyllo and feta. Space rolls slightly apart.
6. 6. Bake for 15-20 minutes until golden brown and crispy.
7. 7. Meanwhile, in a small saucepan, combine honey, red pepper flakes, apple cider vinegar, and a pinch of salt. Simmer gently for 2-3 minutes. Remove from heat.
8. 8. Arrange baked rolls on a platter and drizzle generously with warm chili honey. Serve immediately.
Notes
For extra crispiness, ensure each phyllo layer is well-brushed with oil. Adjust red pepper flakes to taste. Serve immediately for best texture. Leftover chili honey can be stored at room temperature for weeks.
