Ingredients
3–4 medium ripe peaches
2 (4-6 oz) balls burrata cheese
1/2 cup packed fresh basil leaves
4–5 cups arugula or mixed greens
2–3 tablespoons extra virgin olive oil
1–2 tablespoons balsamic glaze (optional)
Flaky sea salt to taste
Freshly ground black pepper to taste
Instructions
1. Wash peaches. Slice into thin wedges or half-moons (peeling optional).
2. Scatter arugula or mixed greens on a large platter or shallow bowl.
3. Place sliced peaches among the greens.
4. Drain burrata. Gently tear or cut into rustic pieces and arrange over greens and peaches.
5. Tear or roughly chop basil leaves and sprinkle over salad.
6. Drizzle olive oil generously over the salad. If using, lightly drizzle balsamic glaze.
7. Sprinkle with flaky sea salt and freshly ground black pepper to taste.
8. Serve immediately.
Notes
For best flavor, let burrata come to room temperature for 15-20 minutes before serving. Choose ripe but firm peaches. Assemble just before serving to prevent wilting or browning. Quality extra virgin olive oil enhances the dish. Balsamic glaze can be homemade by reducing balsamic vinegar.
