1 pound fresh radishes (about 2 bunches)
2 tablespoons unsalted butter, melted
½ teaspoon flaky sea salt
¼ teaspoon freshly ground black pepper (optional)
Instructions
1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. Wash radishes thoroughly. Trim off green tops and root ends. Halve or quarter any large radishes for even size.
3. In a small bowl, melt butter. In a large bowl, toss radishes with melted butter, flaky sea salt, and black pepper until evenly coated.
4. Spread radishes in a single layer on prepared baking sheet. Do not overcrowd.
5. Roast for 20-25 minutes, shaking pan halfway through, until radishes are tender when pierced with a fork and edges are lightly caramelized.
6. Serve hot immediately.

For best results, use fresh, firm radishes. Avoid overcrowding the pan to ensure proper caramelization. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in a 350°F oven for 10-15 minutes or in an air fryer at 375°F for 5-7 minutes for best texture. Add fresh herbs like dill or chives after roasting for extra flavor.
