2 tablespoons cornstarch
1/4 cup caramel sauce
2–3 tablespoons maple syrup or honey
1 teaspoon vanilla extract
1/4 teaspoon sea salt

Instructions
1. 1. Whisk dry ingredients: In a medium saucepan, whisk together the protein powder and cornstarch until no lumps remain.
2. 2. Add wet ingredients (mostly): Pour in about 1 cup of the milk and whisk until smooth. Add the remaining 1 cup milk, maple syrup (or honey), vanilla extract, and sea salt. Whisk until well combined.
3. 3. Cook the pudding: Place the saucepan over medium heat and stir continuously with a whisk or rubber spatula. Cook until the mixture thickens and begins to bubble gently, about 5-7 minutes. Continue stirring for 1-2 more minutes after it starts bubbling.
4. 4. Stir in caramel: Remove from heat and stir in the caramel sauce until fully incorporated. Taste and adjust sweetness or salt if desired.
5. 5. Chill and set: Pour the warm pudding into individual serving bowls or a glass container. Press plastic wrap directly onto the surface to prevent skin from forming. Refrigerate for at least 2-4 hours, or until fully set and chilled.
6. 6. Serve and enjoy: Remove plastic wrap, garnish with desired toppings, and serve cold.
Notes
For dairy-free: use unsweetened almond, oat, or soy milk and a dairy-free protein powder.
For sugar-free: use sugar-free caramel sauce, unsweetened milk, and a sugar-free sweetener like stevia or monk fruit.
To avoid lumps: whisk dry ingredients thoroughly and add milk gradually.
Storage: keep in an airtight container in the fridge for up to 4-5 days. Do not reheat; enjoy cold.
