A quick and healthy weeknight meal combining the best of smash burgers and tacos. Lean ground beef is smashed thin and seared until crispy, then served in warm tortillas with fresh vegetables and a tangy Greek yogurt-based sauce. Perfect for busy families and customizable to various dietary needs.

For the Burger Patties: 1 lb Lean Ground Beef (90/10 or 93/7)

½ tsp Salt

¼ tsp Black Pepper

For Assembly: 8-10 (6-inch) Small Flour or Corn Tortillas

2 cups Shredded Iceberg Lettuce

1 cup Diced Roma Tomatoes

½ cup Diced Pickles

½ cup Shredded Reduced-Fat Cheddar Cheese (optional)

For the Healthy Secret Sauce: ½ cup Plain Greek Yogurt

2 tbsp Ketchup (low-sugar option)

1 tbsp Yellow Mustard

1 tbsp Dill Pickle Juice

¼ tsp Garlic Powder

¼ tsp Onion Powder

¼ tsp Paprika

Instructions

1. 1. Prepare the Secret Sauce: In a small bowl, whisk together Greek yogurt, ketchup, mustard, pickle juice, garlic powder, onion powder, and paprika. Set aside.

2. 2. Form the Meatballs: Divide ground beef into 8-10 equal portions. Gently roll each into a loose, golf-ball-sized sphere.

3. 3. Heat the Skillet: Place a large cast-iron or heavy-bottomed pan over medium-high heat. Let it get very hot (3-4 minutes).

4. 4. Smash and Cook (Batch 1): Add 3-4 beef balls to the hot skillet. Place parchment paper over each. Using a sturdy spatula or press, firmly smash each into a thin patty (~¼-inch thick). Press for 10 seconds.

5. 5. Sear First Side: Cook undisturbed for 2-3 minutes, until edges are crispy and patty releases easily.

6. 6. Flip and Finish: Flip patties. If using, add cheese immediately. Cook for another 1-2 minutes until cooked through and cheese melts. Remove and set aside.

7. 7. Repeat Cooking: Repeat steps 4-6 with remaining beef balls.

8. 8. Warm Tortillas: While last batch cooks, warm tortillas in a dry skillet, over a gas flame, or in the microwave.

9. 9. Assemble: Place a smashed patty on each warm tortilla.

10. 10. Add Toppings: Top with shredded lettuce, diced tomatoes, diced pickles, and extra cheese if desired.

11. 11. Drizzle Sauce: Generously drizzle with the prepared healthy secret sauce.

12. 12. Serve: Serve immediately.

Pro Tips: Get pan very hot before adding meat. Do not overwork the meat when forming balls. Smash firmly and immediately. Cook in batches to avoid overcrowding. Warm tortillas to prevent cracking. Storage: Store cooked patties, sauce, and chopped veggies separately in airtight containers in fridge for 3-4 days (sauce up to 5 days). Reheat patties in a skillet or air fryer to re-crisp.
