1 cup all-purpose flour
4–6 cups vegetable oil for frying
1/2 cup granulated sugar (for coating)

1 cup semi-sweet chocolate chips
1/2 cup heavy cream
1/2 tsp vanilla extract (optional)
Instructions
1. 1. In a medium saucepan, combine water, butter, 1 tbsp sugar, and salt. Bring to a rolling boil over medium heat, ensuring butter melts and sugar dissolves.
2. 2. Remove from heat and add flour all at once. Stir vigorously with a wooden spoon until a smooth dough ball forms, pressing against pan sides for 30-60 seconds. Transfer to a large bowl.
3. 3. In a deep pot, heat 4-6 cups oil to 375°F (190°C) using a deep-fry thermometer.
4. 4. Fit a piping bag with a large star tip (e.g., Wilton 1M). Fill with dough.
5. 5. In a shallow dish, mix 1/2 cup sugar and 1 tbsp cinnamon for coating.
6. 6. Pipe 4-6 inch strips of dough into hot oil, cutting with scissors. Fry in batches (4-5 at a time) for 2-4 minutes per side until golden brown. Maintain oil temperature.
7. 7. Remove with tongs, drain on paper towels, then immediately roll in cinnamon sugar.
8. 8. For chocolate sauce: heat heavy cream until simmering, pour over chocolate chips in a bowl, let sit 2 minutes, stir until smooth. Add vanilla if desired.
9. 9. Serve churros immediately with warm chocolate sauce.
Notes
Use a star tip for crispy ridges. Keep oil at 375°F to avoid greasiness. Do not overcrowd the pot. Serve immediately for best texture. Leftovers can be reheated in oven at 375°F for 5-8 minutes.
