Ingredients
1 lb ground beef (85-93% lean)
1 small head cabbage (about 3–4 cups shredded)
4–5 cloves garlic, minced
1-inch piece fresh ginger, grated or minced
3 tbsp low sodium soy sauce
1 tbsp rice vinegar
1 tbsp toasted sesame oil
1–2 tsp chili garlic paste
1 tsp brown sugar
1 tsp cornstarch
2 tbsp water or broth
1 tbsp olive oil or avocado oil
2–3 green onions, sliced (for garnish)
1 tsp sesame seeds (for garnish)
Instructions
1. 1. Prep your ingredients: Shred cabbage, mince garlic, grate ginger, slice green onions. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili garlic paste, brown sugar, cornstarch, and water or broth to make the sauce. Set aside.
2. 2. Heat olive or avocado oil in a large skillet or wok over medium-high heat. Add ground beef and break apart with a spoon. Brown thoroughly, about 5-7 minutes.
3. 3. Drain excess fat from the skillet.
4. 4. Push beef to one side, add minced garlic and grated ginger to the empty side. Sauté for 30 seconds until fragrant.
5. 5. Stir garlic and ginger into the beef. Add shredded cabbage, toss to combine. Cook 3-5 minutes until cabbage is tender-crisp.
6. 6. Whisk sauce again (cornstarch settles), then pour over beef and cabbage mixture.
7. 7. Stir continuously for 1-2 minutes until sauce thickens and coats everything. Remove from heat.
8. 8. Garnish with sliced green onions and sesame seeds. Serve immediately.
Notes
For less spice, reduce chili garlic paste to ½ tsp or omit. For gluten-free, use tamari instead of soy sauce. Cabbage can be swapped or varied; bell peppers, carrots, snap peas, or spinach work well. This dish reheats well for up to 3-4 days in the fridge, but freezing is not recommended due to cabbage texture changes.
