1 lb ground beef (85-93% lean)

1 small head cabbage (about 34 cups shredded)

45 cloves garlic, minced

1-inch piece fresh ginger, grated or minced

3 tbsp low sodium soy sauce

1 tbsp rice vinegar

1 tbsp toasted sesame oil

12 tsp chili garlic paste

1 tsp brown sugar

1 tsp cornstarch

2 tbsp water or broth

1 tbsp olive oil or avocado oil

23 green onions, sliced (for garnish)

1 tsp sesame seeds (for garnish)

Instructions

1. 1. Prep your ingredients: Shred cabbage, mince garlic, grate ginger, slice green onions. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili garlic paste, brown sugar, cornstarch, and water or broth to make the sauce. Set aside.

2. 2. Heat olive or avocado oil in a large skillet or wok over medium-high heat. Add ground beef and break apart with a spoon. Brown thoroughly, about 5-7 minutes.
