Ingredients
1 lb (450g) medium shell pasta
1–1.5 lbs sirloin steak, cut into 1-inch cubes
1 tbsp olive oil
1 tsp garlic powder
½ tsp onion powder
½ tsp salt (for steak)
½ tsp black pepper (for steak)
½ cup (1 stick) unsalted butter
4–6 cloves garlic, minced
2 cups heavy cream
1.5 cups freshly grated Parmesan cheese
½ tsp salt (for sauce)
¼ tsp black pepper (for sauce)
2 tbsp fresh parsley, chopped (optional)
¼ tsp red pepper flakes (optional)
Instructions
1. 1. Prepare the steak: Pat steak cubes dry with paper towels. In a bowl, toss with olive oil, garlic powder, onion powder, ½ tsp salt, and ½ tsp black pepper.
2. 2. Cook pasta: Bring a large pot of salted water to a boil. Add shell pasta and cook until al dente. Reserve 1 cup pasta water, then drain pasta.
3. 3. Sear steak: Heat a large skillet over medium-high heat. Add steak bites in a single layer (work in batches if needed). Cook 2-3 minutes per side for medium-rare. Remove from pan and set aside.
4. 4. Sauté garlic butter: Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté 1-2 minutes until fragrant.
5. 5. Build Alfredo sauce: Pour in heavy cream. Bring to a gentle simmer over low heat. Gradually whisk in Parmesan cheese until smooth. Season with ½ tsp salt and ¼ tsp pepper. If too thick, add a splash of reserved pasta water.
6. 6. Combine and serve: Return cooked pasta to the skillet. Add seared steak bites. Toss gently to coat. Garnish with parsley and red pepper flakes if desired. Serve immediately.
Notes
Pat steak dry for best sear. Do not overcrowd the pan when searing. Use freshly grated Parmesan for smooth sauce. Reserve pasta water to adjust sauce consistency. Serve immediately for best texture. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat gently on stovetop with a splash of milk or cream.
