Ingredients
Fresh strawberries, hulled and roughly chopped, 1 ½ cups
Milk (dairy or non-dairy), 1 ½ cups
Vanilla protein powder, 1 scoop (30g)
Chia seeds, ¼ cup
Sweetener of choice (maple syrup, honey, or sugar-free alternative), 1-2 tablespoons
Vanilla extract, ½ teaspoon
Pinch of salt (optional)
Instructions
1. Hull and rinse strawberries. Roughly chop if large.
2. Pour milk into blender. Add vanilla extract and sweetener.
3. Add strawberries, protein powder, chia seeds, and optional salt to blender.
4. Blend on high until completely smooth and creamy, about 1-2 minutes. Scrape sides as needed.
5. Taste and adjust sweetness or flavor. Blend again briefly if needed.
6. Pour into individual serving jars (e.g., 4 small mason jars).
7. Cover jars and refrigerate for at least 4 hours or overnight until set.
8. Serve chilled. Stir before serving if desired. Add toppings of choice.
Notes
Use ripe strawberries for best flavor. Chilling time is essential for chia seeds to thicken. Pudding keeps in the fridge for 3-4 days in airtight containers. For a thinner consistency, stir in extra milk after chilling. For a thicker pudding, add 1 tablespoon more chia seeds. Frozen strawberries can be used without thawing.
