A quick, wholesome, and protein-packed parfait that captures the nostalgic flavor of strawberry shortcake. Perfect for busy mornings, post-workout snacks, or a guilt-free dessert layered with creamy Greek yogurt, fresh strawberries, and a delightful shortbread crunch.

  • Total Time: 10 minutes
  • Yield: 2 parfaits

Ingredients

Fresh Strawberries, 2 cups, diced

Plain Greek Yogurt, 2 cups (full fat or 2%)

Vanilla Protein Powder, 2 scoops (approx. 50g)

Milk, 1/4 cup (any kind)

Maple Syrup or Honey, 2 tablespoons

Vanilla Extract, 1 teaspoon

Graham Crackers or Shortbread Cookies, 1/2 cup, crumbled

Instructions

1. 1. Wash, hull, and dice the strawberries into small pieces. If desired, toss with a tiny drizzle of maple syrup and let sit to release juices.

2. 2. In a medium bowl, combine Greek yogurt, vanilla protein powder, milk, maple syrup or honey, and vanilla extract. Whisk vigorously until smooth and creamy. Adjust thickness with extra milk if needed.

3. 3. Crush the graham crackers or shortbread cookies into a mix of fine crumbs and small pieces.

4. 4. In two clear glasses or jars, layer the yogurt mixture, strawberries, and crumbles. Repeat layers until all ingredients are used, finishing with crumbs and a few strawberries on top.

5. 5. Serve immediately for maximum crunch, or refrigerate for at least 30 minutes to allow flavors to meld. Store leftovers in airtight containers for up to 3 days, keeping crumbs separate if prepping ahead.

Notes

For meal prep, store crumbles separately and add just before serving to maintain crunch. Adjust sweetness to taste based on your protein powder. For a dairy-free version, use plant-based yogurt and milk, and ensure protein powder is plant-based. Nutrition values are estimated using nonfat Greek yogurt, 2% milk, and standard ingredients.
