Strawberry Shortcake Protein Pudding is a no-bake, high-protein treat that captures the classic dessert flavors of sweet berries, creamy pudding, and a hint of ‘shortcake’ from crushed graham crackers. Perfect for breakfast, snacks, or a guilt-free dessert, this recipe is quick to prepare, packed with protein, and easily adaptable for dairy-free or other dietary needs.

  • Total Time: 40 minutes (includes 30 minutes chilling)
  • Yield: 2 servings 1x

Ingredients

Scale

1 cup plain Greek yogurt (full-fat or 2%)

1 scoop (25-30g) vanilla protein powder

1/4 cup milk (dairy or non-dairy)

12 tablespoons maple syrup or honey

1/2 teaspoon vanilla extract

1 cup fresh strawberries, chopped

23 full sheets graham crackers, crushed

Optional toppings: whipped cream, extra berries, granola

Instructions

1. In a medium bowl, whisk together Greek yogurt, vanilla protein powder, milk, maple syrup (or honey), and vanilla extract until smooth. Adjust milk for desired thickness.

2. Wash, hull, and dice strawberries; reserve a few slices for garnish.

3. Place graham crackers in a Ziploc bag or between parchment; crush into coarse crumbs.

4. Assemble in jars or glasses: layer 1/3 crushed graham crackers, then a layer of pudding, then diced strawberries. Repeat layers, ending with a top layer of pudding.

5. Cover and refrigerate for at least 30 minutes (or up to overnight) to set and meld flavors.

6. Garnish with reserved strawberry slices and optional whipped cream or extra crumbs before serving.

Notes

Chilling time is essential for best texture and flavor. For meal prep, store pudding mixture separately from graham crackers and assemble just before serving to maintain crunch. Use high-quality protein powder for best taste. Adjust sweetness to your preference.
