12–16 frozen steamed bao buns
1/4 cup fresh cilantro, chopped
2 stalks green onions, thinly sliced
1 tsp toasted sesame seeds (optional)
Sriracha or chili garlic sauce to taste (optional)
Instructions
1. Step 1: Prepare the Beef. Slice the flank steak thinly against the grain into bite-sized pieces. In a medium bowl, combine sliced beef, soy sauce, grated ginger, minced garlic, brown sugar, rice vinegar, and sesame oil. Stir until well-coated. Cover and marinate in refrigerator for at least 30 minutes (2-4 hours or overnight for deeper flavor).
2. Step 2: Cook the Tender Beef Filling. Heat vegetable oil in a large skillet or wok over medium-high heat. Sear the marinated beef in a single layer (do not overcrowd; cook in batches if needed) for 2-3 minutes per side until nicely browned. Remove and set aside. Deglaze pan with a splash of water or broth, scraping up any browned bits. In a small bowl, whisk cornstarch and 1/4 cup water or broth to make a slurry. Return beef to skillet, pour in slurry, and stir constantly until sauce thickens and coats the beef. Reduce heat to low, cover, and simmer 10-15 minutes until beef is tender and easily pulls apart. Optional: shred beef with two forks for easier filling.
3. Step 3: Prepare the Steamed Buns. While beef simmers, steam frozen bao buns according to package directions (typically 5-8 minutes over simmering water in a bamboo or metal steamer) until soft, fluffy, and heated through. Do not oversteam.
4. Step 4: Assemble Your Tender Beef Bao Buns. Carefully open each steamed bun. Spoon a generous amount of warm beef filling into the center. Garnish with fresh cilantro, sliced green onions, and toasted sesame seeds. Add Sriracha or chili garlic sauce if desired. Serve immediately while hot.
Notes
For best tenderness, slice beef against the grain. Marinate longer for deeper flavor. Sear in batches to prevent steaming. To prevent soggy buns, serve assembled immediately or keep filling and buns separate until ready. Store leftover filling in airtight container in fridge for up to 3 days. Reheat gently on stovetop or microwave. Reheat buns in steamer for best texture. You can substitute chicken, pork, tofu, or mushrooms for the beef. Add vegetables like bell peppers or shredded carrots to the filling. Adjust spice level by controlling chili garnishes. For a low-carb option, serve filling in lettuce cups.
