1.5 lbs boneless skinless chicken breasts, sliced into thin strips

1 (15-oz) can black beans, rinsed and drained

2 cups cooked brown rice

1 cup corn (fresh, frozen, or canned)

46 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

2 medium avocados, diced

1/2 cup salsa

1/2 cup plain Greek yogurt

1/4 cup fresh cilantro, chopped

12 limes, cut into wedges

1 tbsp olive oil

1 tsp chili powder

1 tsp cumin

1/2 tsp garlic powder

Salt and black pepper to taste

Instructions

1. Pat chicken dry and slice into thin strips or bite-sized cubes. In a medium bowl, toss chicken with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.

2. Heat a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from skillet and set aside.

3. While chicken cooks, warm the cooked brown rice. If using frozen corn, microwave or quickly sauté it. Rinse and drain black beans. Chop romaine lettuce, halve cherry tomatoes, thinly slice red onion, and dice avocado just before serving.

4. Assemble bowls: place a generous bed of chopped romaine lettuce in each bowl. Evenly distribute warm brown rice over lettuce. Add cooked chicken, black beans, corn, cherry tomatoes, and red onion in separate sections. Place a dollop of Greek yogurt in the center or on the side. Top with diced avocado, a spoonful of salsa, and generous sprinkling of fresh cilantro. Serve immediately with lime wedges for squeezing.

Notes

This bowl is highly customizable: substitute chicken with ground beef/turkey, shrimp, tofu, or extra beans. Use quinoa or cauliflower rice instead of brown rice. Add extra veggies like roasted bell peppers, zucchini, or shredded carrots. Store components separately in airtight containers for up to 3-4 days; reheat only the warm parts before assembling. Add avocado fresh each time to prevent browning.
