Ingredients
6 cups seedless watermelon, cubed (1-inch pieces)
8 ounces feta cheese block, crumbled
1/4 cup fresh mint leaves, chopped
1/4 cup red onion, thinly sliced or finely diced (optional)
2 tablespoons extra virgin olive oil
1 tablespoon fresh lime juice
1/4 teaspoon sea salt (or to taste)
Pinch of black pepper (or to taste)
Balsamic glaze, for drizzling (optional)
Instructions
1. Cut the seedless watermelon into 1-inch cubes and place in a large mixing bowl.
2. Crumble the feta cheese block over the watermelon.
3. Chop the fresh mint leaves and thinly slice the red onion (if using). Add both to the bowl.
4. In a small bowl or jar, whisk together the olive oil, fresh lime juice, sea salt, and black pepper.
5. Pour the dressing over the watermelon mixture and gently toss to combine, being careful not to mash the watermelon.
6. Serve immediately. Optionally, drizzle with balsamic glaze just before serving.
Notes
For best results, use a well-chilled watermelon and a block of feta in brine (not pre-crumbled).
Fresh mint is essential; do not substitute dried mint.
Assemble and dress the salad just before serving to prevent it from becoming watery.
Store components separately in the refrigerator if preparing ahead. Leftovers (already dressed) can be stored in an airtight container for up to 1 day but will be watery.
Do not reheat this cold salad.
